Who Am I?
First and foremost, a lover, cooker and baker of healthy, wholesome yummies that not only taste good, but also make my picky tummy happy.
Otherwise: A writer and producer by trade, an adoring wife to an amazing hubby, a dedicated sister and daughter, a smitten mother to two playful kitties, a lover of books, a public radio junkie, an outdoor enthusiast, a travel aficionado, a Food Network addict, a die-hard left winger, an introvert, an independent spirit, an avowed agnostic.
All in all, a very passionate person.
Why HappyTummy?
It wouldn’t be a stretch to say that the reason why I do most things in life is to make sure my tummy is happy. In 1999, after a year of suffering excruciating pain from chronic constipation, I was finally diagnosed with IBS-C. Since then, not a single day has passed that I’m not somehow affected by my condition. However, in the years since, I have discovered, through trial and error, what works and what doesn’t when it comes to living with IBS-C. I’ve changed my lifestyle immensely–I follow a very strict high-fiber, low-fat diet; exercise religiously; practice yoga and meditation and read prolifically. I do believe that all of this has helped me deal with the pain of IBS-C…and my hope is that this blog, my recipes and tips help fellow sufferers feel better too.
I absolutely love to cook and bake, and I love the challenge of adapting recipes to be healthier and more wholesome. I’m also a huge ethnic food lover, my favorites being Korean, Indian, Middle Eastern and Mediterranean. While I’m a vegetarian, my hubby is not, so the recipes you’ll see here will run the gamut. Occasionally, you’ll see purely indulgent recipes…like during the holidays, when all bets are off! :)
