Blueberry Almond Oatmeal

Bowl of Blueberry Almond Oatmeal

B and I feasted on so many delicious dishes during our two-week Mediterranean cruise. Tapas and paella in Spain, pasta and cannolli in Italy, gyros and Greek salad in Greece and—my favorite—baklava in Turkey. We love ethnic cuisine, and completely overdosed on good food. And while it tasted great while we were eating it all, by the time I came home, I was bloated and cranky. There was only one thing I was craving: Superfoods in a bowl.

Surely you’ve read about the so-called Superfoods—nutritional powerhouses that some researchers say ward off disease, help you lose weight, improve your skin, increase your energy, and for me, regulate your digestive system. Lists vary, but most include blueberries, nuts and grains/oats. And what do you know—combine these, and you get a warm, comforting and yummy bowl of goodness.

We got home from our vacation late at night, so the first meal I made for myself was this delicious bowl of oatmeal for breakfast the next day. Steel-cut oatmeal, topped with plump and juicy blueberries, chopped almonds and a sprinkling of ground golden flaxseeds. Mix in a little raw honey, and you’ve got pure tastiness in a bowl.

Recipe: Blueberry Almond Oatmeal
Serves 2

  • 1/2 cup steel cut oats
  • 1 heaping Tbsp. raw honey
  • Handful blueberries
  • 1/4 cup almonds, roughly chopped
  • 2 Tbsp. golden flaxseeds, ground

Cook steel cut oats in 2 cups of boiling water until soft and chewy, or until water has almost evaporated, about 20 minutes. The oatmeal will continue to absorb the water as it sits. Mix in raw honey.

Divide oatmeal into two bowls. Top each with blueberries, almonds and flaxseeds.

    Sounds super healthy! looks good too. My favorite oatmeal is made with milk and heavy cream and topped butter and sugar, LOL. I’m not sure it’s even good for you with all that.

    Your trip sounds wonderful, I am green with envy.
