I’ve sung about the virtues of ginger before. I am a huge fan of it…and I mean huge. I’m convinced it’s nature’s cure for indigestion, bloating and nausea, which I’m cursed with.
So pair ginger with another favorite of mine, and I know the recipe can’t go wrong. And indeed, Dorie Greenspan’s Fresh Ginger and Chocolate Gingerbread was sooo right. In every way. Spicy ginger and chunks of chocolate, suspended in a moist cake and then slathered with more chocolate…mmm.
I made a few substitutions to her original recipe–I used Smart Balance instead of butter, replaced half of the all-purpose flour with whole wheat flour, swapped crystallized ginger for the stem ginger and omitted the cloves and added nutmeg instead.
If you couldn’t tell, I loved this dessert. The gingerbread came out beautifully, and tasted grand too. The flavors were even better with each passing day, as they got stronger and more concentrated. The chocolate icing made the gingerbread that much more decadent.
I cut my gingerbread into 15 squares, and thought each piece was the perfect size.
