Is there anything better waking up on a cold, snowy morning, peddling downstairs in your PJs, whipping up a batch of homemade muffins…and then eating those piping hot muffins, straight from the oven, with hot cup of coffee, feet dangling from the kitchen barstool?
I’d say no. :)
And that is precisely what my sister and I did the Sunday after Thanksgiving, when all of the festivities had died down. With extra pumpkin in the fridge and Dorie’s big fat cookbook beckoning, we knew her Pumpkin Muffins would hit the spot.
I wasn’t yet a member of Tuesdays with Dorie when the group made this recipe, so I was glad to have found the perfect opportunity to try them. I wonder why some of the TWD bakers had problems with this recipe? Quite a few of them found the muffins to be dry, bland, not pumpkin-y enough, not sweet enough. Hmmm.
My sister and I thought they were absolutely heavenly. So soft, so moist, so spiced…so great, that my sister plans on baking these again this weekend, back in her NYC apartment. Booo…wish we could make them together again!

Great idea using left over pumpkin. Are the white thing nuts? or seeds?
Looks healthy as usual!!!

Your pumpkin mumfins are beautiful. You captured them well. I love muffins. To me, they are such a dainty, perfectly portioned treat.
