Cookies are by far my favorite things to bake. I love how they’re sweet, bite sized pieces of pure carb, and I love how there are an infinite number of ways to decorate them. So of the few Dorie recipes I’ve made so far, these Linzer Sablés are already my favorite. They were so easy, so tasty and some of the cutest cookies I’ve ever made!
I made only a few changes to the recipe, subbing a little bit of whole wheat flour for the AP flour (which is why my cookies have the flecks of beige) and sandwiching strawberry jam and lime curd instead of the raspberry or apricot jam the recipe called for. I figured with it being so close to the winter holiday, red and green would be rather festive, no? I also halved the recipe, because I had already ODed on sweets this past week and definitely didn’t need more cookies lying around.
I loved the taste of these cookies–only slightly sweet, with a subtle spice from the cinnamon and nutty undertones from the ground almonds. The filling made all the difference, adding the perfect sweetness and making the cookies so adorable. I’m not a huge fan of powdered sugar, so I only dusted the cookies…mainly for appearance. :) The texture of the Linzer Sablés was wonderful too–soft, dense and a little bit chewy. Yum.

i think i know exactly how these would taste and feel just by looking at these pictures – i can taste it in my mouth right now. i like all your substitutions, especially lime curd – that sounds delicious

Your cookies are so stinkin’ cute. I think this cookie recipe is fabulous. It’s my new favorite recipe.
How much whole wheat flour did you use? I wanted to do that also, but was afraid I would mess it up.

Yes, yes! Lots of pretty colors, red and green are perfect for the holidays. Besides, lime in the middle of winter is the way to go!

I love your cookies, they look beautiful. The idea of lime curd seems fantastic to me. Oddly enough I have never even had curd of any kind, but you make it look delicious. Wonderful job!
